Jays “Curley Waves” Potato Chips with Smoked Paprika Aioli

1 Bag of Jays “Curley Waves” potato chips
3/4 cup mayonnaise
1 garlic clove
1 teaspoon smoked Spanish paprika
1 teaspoon fresh lemon juice
1 tablespoon plus 2 teaspoons flat-leaf parsley
Kosher salt and freshly ground pepper

In a food processor, puree the mayonnaise with the garlic, smoked paprika and lemon juice. Stir in 2 teaspoons of the parsley and season with salt and pepper, adjust for taste. Scrape the aioli into a small bowl and refrigerate.

For events I spread the chips out on a platter and put the aioli in a squeeze bottle and just draw all over the chips trying to hit mostly the ends but not with too much. You can of course just use put the aioli in a dish and have people dip the chips but suggest just a tad.
