yellow onion 3-4oz peeled and in 1/4 inch dice
fresh ground turkey thigh meat
plain cup breadcrumbs
ground fennel seed
ground mustard seed
American cheese, divided into half slice stacks for the burger
Slider size buns
Spatulas for burger smashing
Turkey Burger Secret Sauce (Makes 2 cups)
Cloves fresh garlic, minced or pushed through a garlic press
chives, finely chopped
fresh cracked pepper
Combine all ingredients in a bowl and whisk well. For best results, make at least several hours ahead of time to allow flavors to mingle.
In a large skillet over medium heat, sauté onions and peppers together in olive oil until soft, stirring, do not brown about 4 to 5 minutes. Set aside to cool.
In a large bowl, using your hands, combine all ingredients and mix well. Take a pinch of the mix and fry off to check seasonings especially salt and add more of what you’d like to your taste. The sauce is really the flavoring for this sandwich.
Chill mix in refrigerator for 30 minutes to 1 hour. Using an ice cream scoop or kitchen scale portion mix into 2-ounce balls and place on a sheet tray.
Heat a cast iron skillet or griddle over high heat and add a pat of butter and maybe a small splash of olive oil to the pan.
Have your turkey balls and cheese ready to go and add as many balls as you feel fit your cooking surface. Let them cook for a minute and then smash each one with a heavy spatula using the other spatula to release the burger is necessary.
Turkey will cook quickly so check your patties after a minute or so and flip if browned and then top with two quarters of the cheese slices and let cheese melt a bit but make sure turkey is cooked thru, no pink. Remove to bun and top with sauce.
