Burgers Smashed with Sliced Onion Special Spice Mix and American Cheese

sweet onion, cut in half and sliced super thin, use a mandolin if you have one

olive oil, beef fat or bacon fat

brioche or potato buger buns

American cheese ( optional )

Smashing metal spatula and regular metal spatula to use for possible release from the smashing spatula, you'll figure it out
Instructions:

Combine salt, pepper, onion powder, garlic powder, paprika and cayenne to create a signature burger seasoning. Portion ground beef evenly into 4 loosely packed balls.

Preheat griddle or cast iron skillet to medium high. I used my griddle on the Weber.

Be ready to go and don’t walk away. Add oil or fat to cooking surface and spread evenly. When oil begins to smoke, add the four burger balls and top each with a¼ of the onions; sear 1 minute. Smash onion topped burger ball into onion with back of big spatula to make a round patty less than 1/2-inch thick. Season burger with a sprinkling of burger seasoning.

Allow the burger to develop a deep brown sear, 2-3 minutes. Flip and lightly smash the burger into the onion and top with more seasoning, less is more and maybe a smear of mustard (optional) and a slice of cheese; sear until burger is cooked through, 1-2 minutes (160°F internal temperature). Toast the bun half’s on the grill or flattop but don’t burn. Remove buns and burgers to finish the sandwich.
