Mamas Jiffy Corn Casserole

Ingredients:

  • 2 Eggs
  • 1 can / whole kernal corn, drained
  • 1 can / creamed corn
  • 1 box / Jiffy corn muffin mix
  • 1 stick / unsalted butter, melted plus 1 Tlbs butter to grease the baking dish
  • 1 cup / sour cream
  • 1 cup / shredded cheddar cheese

Instructions:

  1. Preheat oven to 350°F. In a large bowl, beat the eggs.
  2. Mix all ingredients except cheese. Spoon into a greased 9”x13” baking dish. Sprinkle shredded cheese on top.
