Tuna Salad Sort of a Classic Version

Ingredients:

cans solid, water packed tuna

mayonaise

cup /
finely diced celery

tablespoons /
finely diced red onion

finely minced red bell pepper

tablespoons /
drained capers

teaspoons /
lemon juice to taste

Kosher Salt and Freshly ground black pepper to taste

Sliced sandwhich bread of choice

Optional 2 or 3 final diced dill pickles to taste
Instructions:

In a medium bowl, combine the tuna, mayonnaise, celery, onion, bell pepper, capers and lemon juice. Mix with a fork until thoroughly combined. Season to taste with salt and pepper. Serve on the sandwich bread of your choice.

Chef’s note: I put rough cut vegetables in the food processer and pulse several times to get nice small dice but don’t over process, taste and add as you please. Salad will be better after an hour or two and even better overnight.
