Rigatoni with Three Cheeses Whipping Cream and Ham

thick sliced ham, diced

grated pecorino Romano

Instructions:

Heat a large pot of salted water to a boil. Cook the pasta according to package directions for al dente, then drain and set aside.

In a 12 inch cask iron skillet or in an oven proof standard skillet over medium high heat, combine the cream, paprika, cayenne and hot sauce. Season with salt and pepper. Bring to a low simmer (watch that the cream doesn’t boil) and simmer, stirring occasionally until the cream mixture is reduced by half and thickened, about 5 minutes. Whisk in the cream cheese and Gouda until fully melted, check for seasoning. Stir in the ham and cooked pasta and continue to mix until fully combined.

Stir together the panko, pecorino and scallions in a medium bowl. Sprinkle the panko mixture evenly over the mac and cheese.

Bake at 400 degrees for 10 minutes or until top browns. Remove and let sit for five minutes. Serve in bowls.
