Homemade Chicken Tenders with Everything Bagel Seasoning over Salad

Ingredients:

  • 2 Tblsp / all-purpose flour
  • 1 large / egg
  • 1/2 cup / panko breadcrumbs, preferably whole-wheat
  • 1 Tblsp / everything bagel seasoning (see tip)
  • 1 lb / chicken tenders or whole chicken breasts sliced into tenders
  • 1/4 cup / grapeseed or canola oil
  • 2 Tblsp / extra-virgin olive oil
  • 1 Tblsp / white-wine vinegar
  • 1 tsp / Dijon mustard
  • 1 tsp / honey
  • 1/8 tsp / ground pepper
  • 5 oz / mixed baby greens
  • • seasoned salt and a little poultry seasoning to add a bit more kick - optional

Instructions:

  1. Place flour in a shallow dish and lightly beat egg in another shallow dish. Mix breadcrumbs and everything bagel seasoning in a third shallow dish. Dredge chicken tenders in flour, then egg, then breadcrumbs.
  2. Heat grapeseed (or canola) oil in a large skillet over medium-high heat. Add the chicken and cook, turning once, until golden brown and an instant-read thermometer registers 165 degrees F, about 7 minutes total, adjusting the heat as needed to prevent burning.
  3. Whisk olive oil, vinegar, mustard, honey and pepper in a large bowl. Add greens and toss to coat. Serve the greens topped with the chicken.
  4. Tips
    Woody's Way: Look for Everything Bagel Seasoning in the spice aisle at well-stocked supermarkets or make your own at home. To make your own seasoning, combine 1 tablespoon each dried minced garlic, dried minced onion, poppy seeds, sesame seeds and salt with 1 1/2 teaspoons ground pepper. Store in an airtight jar or other container for up to 3 months. Stir well to recombine after storing.
