Pork Chops Grilled with Seasoning Rub

Servings: Good for 6 regular or 4 think cut chops. Keep in mind this is a rub and not a marinade, so don’t be afraid to be generous with your measurements.
Pork Chops Grilled with Seasoning Rub
Ingredients:

2 Tablespoons smoked paprika

1 Tablespoon Kosher salt

1 Tablespoon black pepper
-
1 Tablespoon brown sugar
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1/2 teaspoon ground mustard
-
1/2 teaspoon cayenne pepper

EVOO
Instructions:

Start a grill with a hot and cool zone.

Combine all ingredients in a bowl, stirring with a whisk or fork to break up any clumps of brown sugar. Rub the chops with just a touch of olive oil to add a layer of flavor and to help hold the rub.

Add some of the rub to the pork chops and using your hands, make sure to evenly cover all sides before grilling. It won’t hurt to let the chops sit for a while before grilling.

I suggest starting the chops on the cool side of the grill and baking to get the seasoning to set and then finishing over the coals, but don’t walk away as pork cooks quickly and you want to temp check with an instant read thermometer to finish at 130 degrees, little pink. Remove to a tray and cover with foil for five minutes and temp will rise to a finish of 135 degrees.

The recipe works for the number of chops listed but if you would use it on a regular basis a bigger batch will store in air tight container for up to 6 months.
