Quiches with Spinach and Cheese for Sparkling Wine

spinach, washed and roughly chopped

nutmeg seed, grated ( or 1/4 teaspoon ground nutmeg )

Comté cheese, grated. Substitute with Gruyère or Fontina
Instructions:

Preheat the oven to 325° F. Bring a small pot of salted water to a boil. Add the spinach, and cook until soft, about 2 minutes. Drain the spinach, squeezing out the excess water.

In a medium saucepan, heat the olive oil over medium-high heat. Sauté the shallots until soft and just caramelized, about 5 minutes, and season with salt to taste. Combine them with the spinach.

In a large bowl, mix 5 of the eggs with the heavy cream, milk, nutmeg and 1/2 teaspoon of salt.

Coat the cups of 2 muffin tins with butter. Line the muffin cups with the piecrust dough, trimming the edges. Place the muffin tins in the oven, and bake for 10 minutes. Remove from the oven.

Distribute the cooked spinach and shallot mixture evenly among the muffin cups, and cover with the grated Comté. Pour the egg mixture slowly over the spinach and cheese. Beat the remaining egg in a small bowl with a fork. Using a pastry brush, baste the exposed crust with the egg. Transfer the mini-quiches to the oven, and bake for 30 minutes, or until the custard has set and the crust has browned.
