Whipped Brie with Sautéed Mushrooms on Crostini

Servings: About 20 peices.

Ingredients:

  • 1 lb / Triple Cream Brie, Costco has a fine version - Le Cremeux
  • 1 lb / Cremini mushrooms, stems removed, thinly sliced
  • 4 cloves / garlic sliced and chopped
  • 4-5 sprigs / of fresh thyme leaf stripped
  • 3 Tblsp / extra virgin olive oil - more for bread
  • salt and freshly ground pepper
  • 1 French style baguette - thinly sliced - Costco has a good version Brandy

Instructions:

  1. Cheese
  2. Make sure the cheese is cold, it's easier to cut. Remove the rinds from the cheese with a sharp knife, it’s OK if there’s a little rind and then cut into one inch cubes.
  3. Place the cubes in a food processor and whip the cheese until it’a smooth and creamy consistency; you may want to add a touch of cream to thin the cheese if necessary. The mixture should be light and fluffy, with no lumps and spreadable. Take your time here to make sure it gets really whipped well and is easily spreadable. Place in a bowl and set aside while you make the mushrooms
  4. Mushrooms
  5. Melt the butter in a medium sauté pan over medium heat then add the EVOO and stir to blend. Add the garlic and thyme and cook for a minute or two then add the mushrooms to the pan and sauté gently for 10-20 minutes, stirring occasionally, until they begin to caramelize and develop a light brown color.
  6. Be careful here as you add a good splash of brandy to the pan as it may or may not flame up, and cook the mushrooms for another 2-3 minutes making sure to scrape up any brown bits off the bottom of the pan.
  7. Remove from the heat and set aside, then season with salt and pepper, less is more and check for taste.
  8. Place the slices of bread on a baking sheet and brush with a touch of olive oil. Place pan under the broiler and keep watch until the slices just start to toast and remove from oven and let cool.
  9. When ready to serve, use a spreader knife to top each slice of bread with a smear of the whipped cheese and top with a few of the mushrooms.
